One of my favorite parts about cooking is just playing in the kitchen and creating new recipes! Now I am quite the fan of little street tacos. That's a lie, I LOVE TACOS! I probably eat tacos 2-3x a week and I never grow bored. Especially now with my new recipe! This will probably not be the only taco recipe you see us post about!
What I like about this recipe is that it contains a lot of my favorite things and it only took a grand total of maybe 10 minutes to prepare! Nothing like a fast easy recipe that is healthy! Below is my original recipe!
Pulled Pork Tacos with Spicy Zucchini:

my mom had actually smoked the pork and sent it back to college with me so all I had to do was dethaw, heat it up, and pull some meat off!
Ingredients:
Pork
1 Zucchini (chopped in small bite size pieces)
1/2 Onion (chopped finely)
Hot Salsa
White Corn Tortillas
Instructions:
For Zucchini
1. Wash and chop zucchini
2. Chop up 1/2 an onion
3. In a skillet add olive oil and veggies
4. Add spice with Salt, Pepper, and Crushed Red Pepper
5. Let it cook till the zucchini is cooked all the way thru
Overall
1. Heat up meat and tortillas
2. At the base of the tortilla add your salsa
3. Add your pulled pork
4. Add zucchini last
5. Eat up and enjoy!
There is usually enough to have 3 tacos with the amount of zucchini if you are like me and love veggies!!
