Welcome Back!!

It sure is good to be back to the blogging sphere. As a part of my new year I want to be better about posting what I am cooking so it gives me more of a reason to share what is happening in my kitchen to you all.

Tonight's side dish was a big hit tonight! I was watching the Rachel Ray show today while eating breakfast and she inspired my side dish for tonight's dinner. A crowd favorite in my house it potatoes and typically we roast or bake them so I was excited to try a new way. This recipe is super flavorful because of all the fresh herbs! Everyone loved them and I am super excited to do some editing to my leftovers for a delicious breakfast hash!! Looking forward to sharing more recipes with you soon!!

Herb Potatoes:

Yukon Gold Potatoes
Butter
Fresh Parsley
Fresh Dill
Fresh Chives
Fresh Rosemary
Salt and Pepper

Steps:

1. Chop potatoes
2. Boil with a lid on to make it go faster and let them cook for 6-8 minutes
3. Wash herbs and chop finely
4. Melt butter
5. Drain potatoes
6. Put in a bowl and mix all ingredients together!!
7. Serve and enjoy with your entree and a big glass of wine!
